Jairo Arcila is a third-generation coffee grower in Colombia; he started his first farm in 1987 and now has a total of six family-run farms in the Quindio region. In 2015, the Arcila family began specializing in alternative fermentation processes. Thanks to Jairo's expertise, passion, and precision in these processing experiments, the Arcila farms have become known for producing some of Colombia's most innovative and unique coffees.
This particular coffee is from a 100% Castillo varietal microlot. This variety was developed by the Federación Nacional de Cafeteros. Once picked, the cherries were left with the pulp on, and exposed to a dry anaerobic fermentation period of 72 hours. During this fermentation stage, blackberries were added, lending a remarkable berry-forward flavor profile. The cherries were then pulped and placed to dry on raised beds until ideal moisture content was achieved.
