Rodolfo Huezo Pineda cultivates a beautiful piece of land in El Salvador at 1,900 meters above sea level. The climate in the region of Santa Rosa is known for providing excellent conditions for growing coffee. Rodolfo’s farm, El Diamante is a very small area of 1 hectare so his focus is the production of specialty microlots.
Finca El Diamante is planted with both Pacas and Pacamara variety. This lot is a selection of Pacas. Once the coffee is picked ripe and immediately depulped, it is fermented for up to 24 hours before being washed three times and placed on raised beds to dry for 14–17 days.
