Café Imports, based in Minneapolis, Minnesota, sourced this specialty grade “Decaf De Caña” offering as a single-origin coffee in Huila, Colombia. The coffee is custom decaffeinated in Colombia using water and ethyl acetate, which is derived from fermented sugar. First, the coffee is soaked in a solution of ethyl acetate, which selectively bonds with caffeine and closely related molecules in the coffee seed. The coffee is then steamed at a low pressure to remove the ethyl acetate-caffeine compounds while leaving the hundreds of other compounds that produce coffee’s complex flavor and aroma. The finished product contains almost no caffeine--a maximum of 0.03 percent caffeine content--and retains the quality and flavor of the coffee.
